5 Delicious Recipes That Will Make You Want to Go Vegan!

What is the first thing that comes to mind when you think about vegan food? Chances are that you’re probably imagining a salad with leafy greens and other vegetables. While vegan eating does comprise of these ingredients, it is not limited to just them.

There is a misconception in people’s minds that vegan food is boring and that you only get to eat salads when you’re following this form of eating. However, this is far from the truth. Vegan food can be extremely fun and interesting if you know what to cook for yourself.

Here are 5 vegan recipes by Shivam Hingorani, Founder, Ace Blend to dispel these misconceptions and to give you something delicious to eat throughout the day.

Smoothie Bowl

  • 1 ½  chopped bananas
  • 2 cups mixed berries
  • 2 tablespoons unsweetened peanut butter
  • 1 cup of water
  • 2-3 ice cubes
  • 1 serving of hemp seeds
  • Fruit of your choice

Chop the bananas and add them to the blender along with the berries. To this, add raw chocolate vegan powder, unsweetened peanut butter, ice cubes and water. Blend on high speed till the mixture has a thick and creamy texture.

Pour the mixture into a bowl and sprinkle hemp seeds on it to provide crunch to your meal. You can also add your favourite fruit as a topping to personalize the smoothie bowl. Serve cold. 

Buddha Bowl

  • 2 tablespoons lime green vegan protein powder
  • 1 cup cooked quinoa
  • 1 avocado
  • 1 cup broccoli
  • 1 cup chopped iceberg lettuce
  • 1 sliced capsicum
  • 1 ½ cup chopped onions
  • 1/3 cup mung beans
  • 1 tablespoon olive oil
  • 1 tablespoon chilli powder
  • 1 ½ tablespoon lime juice
  • ½ tablespoon salt
  • 1 cup cooked chickpeas

Add the cooked quinoa, broccoli, capsicum and iceberg lettuce to a large mixing bowl. Mix well and then add the cooked chickpeas and lime green vegan protein powder to it. Pour the olive oil and chilli powder into the bowl and stir slowly.

In a separate dish, prepare a mouth-watering guacamole dressing for your Buddha Bowl by mixing the onions, fresh lime, salt and sliced avocado. Add to the bowl once ready and top off the entire dish with mung beans.

Healthy Drink

  • 2 ½ tablespoons lime green vegan protein powder
  • 200 ml unsweetened almond milk
  • 1 cup chopped mango
  • 1 cup chopped bananas
  • ½ cup hemp seeds
  • ½ cup pumpkin seeds
  • 1 handful baby spinach
  • 1-2 ice cubes

Add the spinach, banana and mango to the blender in multiple layers. Sprinkle pumpkin seeds over this and then add the almond milk to the mixture. To this, add the lime green vegan protein powder to give your drink a refreshing taste.

Blend all the ingredients for 2 minutes until the mixture has a smooth texture. Pour it into a glass and sprinkle hemp seeds to add crunch to your drink. Add the ice cubes and serve cold.

Vegan Pancakes

  • 1 ½ tablespoon raw chocolate vegan powder
  • 1 tablespoon vinegar
  • 1 cup gluten-free flour
  • 250 ml unsweetened almond milk
  • 3 tablespoons baking powder
  • ½ tablespoon salt
  • 1 tablespoon vegetable oil
  • 2 cups chopped fresh strawberries
  • 2 cups of water
  • 3 tablespoons maple syrup

Mix the almond milk and vinegar and set them aside. In another bowl, whisk the gluten-free flour, raw chocolate vegan powder, baking powder and salt until combined. Add the oil and milk mixture to the dry ingredients and stir until they combine. Post this, heat the frying pan on medium, add the batter and allow it to cook till bubbles rise to the surface and burst. Flip the pancake and cook for another 30 seconds – 1 minute.

Separately, place the chopped strawberries and water in a pan and simmer for 5-10 minutes till the strawberries are mushy. Add maple syrup and simmer for 5 minutes. Mash the strawberries with a fork to prepare the strawberry sauce. Pour on the pancakes and serve.

Vegan Chili

  • 2 tablespoons lime green vegan protein powder
  • 1 diced yellow onion
  • 1 diced red bell pepper
  • 1 diced green bell pepper
  • 2 garlic cloves
  • 1 tablespoon chilli powder
  • ½ celery, diced
  • 2 carrots sliced
  • 1 tablespoon cumin
  • 1 ½ tablespoons dried oregano
  • 1 cup of filtered water
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 2 cups chopped tomatoes
  • 1 can black beans

Add the onion, celery, red pepper and green pepper to a nonstick pot at medium-high heat with 1/3 cup of water and cook till the water evaporates. Once the vegetables are dry and golden brown, add ¼ cup of water to the pot. Post this, add the garlic, spices, lime green vegan protein powder and carrots to the pot and sauté’.

After this, add the beans, tomatoes and filtered water to the pot and boil over high heat. Reduce the heat to a simmer, cover and cook for 10 minutes. Then, cook the dish without a lid for 7 minutes and stir thoroughly. Serve warm.
