The evening began with Parmesan crème brulee and white truffle oil accompanied by
Luna Argenta Brut. A perfect combination of salty Parmesan and smooth, fruit-driven Brut.
Soup with wine? That’s an odd combination. However, the classy Vila Antinori Bianco with its grassy noted proved to be a good companion to asparagus’ strong flavours. Coming from a warm region of Italy, the wine has that ripeness. Caramalized onions bring in desirable sweetness to the palate.
This was our favourite dish of the evening. A concoction to fish, celery and herbs, it is juicy and rich in flavours. So a heavy and rich wine would complement the dish, explained sommelier Viraj. Blackstone Chardonnay was therefore his choice for wine. Tasting notes: luscious peach and lemon, with stone fruit notes and vanilla aromas coming from American oak.
I am not a big fan of mushrooms but this dish was an exception. The dish has subtle flavours so a wine with low tannins is desirable. Bertani Valpolicella is a cold-climate wine and therefore not too ripe. Its acidity is slightly on the upper side but apt to go along well with the dish. I love the light red colour of the wine as much as I like its taste. Tasting notes: dried cherry and cranberry.
Now, this pairing had us all confused. Or perhaps the combination was a little dry for our liking. The wine from Tuscany, it has higher tannin and therefore more dry. It is richer and heavier than Bertani Valpolicella. The taste, although not disagreeable in itself, left us wanting for something more saucy to beat the dryness.
Vegetarians have an option of choosing Braised baby fennel, parmesan scented potato mash, sautéed mushroom instead.
The evening came to an end with Chocolate shell, white chocolate mousse, marinated strawberry, rum sauce.
Overall, it was a delectable meal and a well hosted evening by Hyatt Regency. We recommend a meal here with your loved one for celebrating Valentine’s Day but of course, it is excellent for anyone who loves to wine and dine!
