Easter Brunch at The Imperial, New Delhi

What do you get when you add some spices to hot chocolate – say, star anise, cinnamon and chili? A perfect end to a sumptuous lunch! The meal, that began with a spiced mulled wine and included Easter flavours from around the world, couldn’t have had a better ending. And what a beginning to the perfectly long weekend!

The pre-Easter brunch at 1911 hosted by The Imperial has clearly set the tone for a long, lazy weekend for us. Bringing in Easter recipes from across the globe, Chef Prem Kumar Pogakula crafted a well-thought out menu that symbolized an ideal family holiday meal.

Green chervil & broccoli soup marked the beginning of the brunch even as the mulled wine brought festive flavours.

What’s Easter without ham! The expected dish came in a surprisingly pleasant form. Maple glazed honey roasted ham with caramelized walnuts. The smokey flavour of ham accompanied by a bite of sweet walnuts created a beautiful concoction that made this meal magical. (We loved the walnuts so much that the Chef packed in a little takeaway for us!) German potato salad served along with it complemented the saltiness well.

The main course was an elaborate affair with Indian and international aromas. From Easter food traditions in north west England to Goan meals, the Chef covered them all. The menu included: Orange gremolata river sole with capers and garlic confit; Mediterranean grilled vegetable lasagna; torta pascualina with cherry tomato confit; Lancashire hot pie; Hunter style Irish chicken stew; Chicken Cafreal; Dauphinoise potatoes; Four cheese gnocchi gratin; Cabbage foogath; and Herb rice. It’s difficult to pick a favourite since each had distinct, unique flavour. Together these created a symphony that’s best enjoyed with a peaceful afternoon nap!

Coming to the sweetest part of the meal… To say that the hot chocolate (as mentioned above) was the best would do injustice to Mexican capirotada, Rum soaked Spanish rosquillas, and Carrot cake. The Mexican bread pudding with its sublime taste is something that even a person with no sweet tooth would relish. The rum soaked rosquillas are simply decadent.

But of course, the deal was sweetened by a spicy hot chocolate. The sugary drink spiced with star anise, cinnamon, and red chili creates a magic that is best experienced only by tasting it.
