Christmas Celebrations at The Imperial, New Delhi

If you are looking for a dessert idea for your Christmas party, may we recommend a pizza? A dessert pizza! Imagine a chocolate base with a layer of Philadelphia cheese topped with nuts & raisins soaked in brandy…

We got a taste of this sinful indulgence at the wonderful Christmas soirée, organized at The Imperial New Delhi. While the Flambéd Chocolate Pizza was the highlight, there were other recipes too shared by the talented chefs. Cooking lessons being only one part of the fun, there were delicious snacks, wine, goodies from Santa, and delightful conversations to make it a perfect pre-Christmas party. Thanks to the lovely team (or should I say family) at the hotel: Aparupa Ray Gaunguly, Ruchi Jain, and Megha Garg for organizing yet another fun-filled evening!

Chef Prem K Pogakula – Executive Sous Chef The Imperial New Delhi and Chef Vivek Chauhan- Pastry Chef made the evening gastronomically delightful with delicacies such as Strawberry and Passion fruit jelly; Pandoro bread with Mascarpone cheese; Christmas pudding with brandy sauce; scones filled with clotted cream, lemon curd and strawberry jam; dipped chocolate strawberry; minced pie.

 

While we had a sweet time relishing all these delicacies, here’s sharing the recipe for the delicious Chocolate Pizza as told to us by Chef Rakesh Rana:

Recipe for Chocolate Pizza

Ingredients: 

Refined flour, cocoa powder, yeast, milk powder, olive oil, honey, warm water

Method:

Take four cups refined flour. Add 4 spoons cocoa powder and 4 spoons milk powder. Mix them all together.

In a separate bowl, mix yeast with 2 cup lukewarm water (which is half the quantity of flour). Add 2 spoon ((15 gms) of yeast and 2 spoon honey. Mix them together.

Now knead the flour using the water mix for 2-3 minutes to make it soft. Add olive oil so that it makes it easier to lift the dough which is too soft otherwise. Put it in a container and let it rest for half-an-hour. It should be soft enough to be flattened with hand and not require a rolling pin. Dust the dough with some semolina.

Use pizza screen to remove excess of semolina. Add a layer of Philadelphia cheese and top it with strawberry, raisins and nuts soaked in brandy. Preheat oven to 450°F; bake for about 20 minutes.
